4月より、春の訪れを感じる新メニューが登場。

マグロ、ホタテ、エビの海の幸を藻塩のジュレで包み、
柑橘の爽やかなソースとエディブルフラワーで彩った一皿からコースは始まります。

続く前菜には、フォワグラのムースリーヌをコルネ仕立てで。
ドライフルーツとナッツの食感が、豊かな味わいに奥行きを添えます。

魚料理は、豊洲市場より届く鮮魚のポワレ。
ハマグリと明日葉のナージュが、やさしく寄り添います。

メインには、豪州産大麦牛ロースのローストを。
山葵風味のエシャロットコンフィとボルドレーズソースで、
奥行きのある味わいに仕上げました。
また、和牛グリルへのアップグレードもご用意しております。

デザートは、ライム香るヴァシュランに季節のフルーツとシャーベットを添えて。
初夏にふさわしい軽やかな余韻をお楽しみください。

Starting in April, we will introduce a new menu that captures the essence of spring.

The course begins with a dish featuring seafood—tuna, scallops, and shrimp—enveloped in a seaweed salt jelly,
garnished with a refreshing citrus sauce and edible flowers.

The next appetizer is a foie gras mousseline served in a cornet.
The textures of dried fruits and nuts add depth to the rich flavor.

The fish course features a poached fish delivered fresh from Toyosu Market,
gently accompanied by a nage of clams and ashitaba.

For the main course, we present a roast Australian barley-fed beef loin.
Paired with wasabi-flavored shallot confit and a Bordelaise sauce,
it offers a rich, layered flavor profile.
We also offer an upgrade to grilled Wagyu beef.

For dessert, we present a lime-scented vacherin topped with seasonal fruits and sorbet.
Please enjoy the light, refreshing finish perfect for early summer.
